I wish I had pictures of my patient's faces when I suggest to them for the first time to eat more leafy green veggies in their diet like kale. I remember having kale for the first time myself in a smoothie and not really enjoying it. I'm sure this is exactly what they were thinking all kale tastes like, or even worse. Kale is one of the best superfoods that we have available to us so I invite you to try this recipe to change your mind and fall in love with kale.
Ingredients:
1/2 pound bacon
1 medium onion
1 - 2 cloves garlic
1 large stalk kale
Salt to taste
Preparation:
In frypan over medium heat, cook bacon cut up in pieces.
Add onions and garlic and cook until lightly browned.
Chop kale and add to pan. Stir until kale is evenly coated. Cook until kale is tender.
Season with salt. Serve warm.

Is it not counterproductive to eat a “superfood” alongside a not-so-super-food like bacon….?

Great question! Would it be ideal for people to always eat kale alongside broiled salmon or organic free-range chicken?….Sure! But sometimes people need baby steps to get started. Also, there is now plenty of evidence showing saturated fat is not the villain it’s been made out to be for so long. I enjoy bacon without any guilt a couple times a month.
Delicious! My fav with Kale now as well. It’s also an opportunity to make a statement by buying humanely raised pork. A little goes a long way.
