First Seminar for Naturopathic Medicine Week a Success

Approximately 12 people attended the first of our free seminars for Naturopathic Medicine Week and it was a great success. Dr. Daralyn Bates discussed how eating healthy on a budget can be a reality with examples from our local grocery stores. She also stressed the importance of eating nutrient dense foods to get the most value and nutritional benefit from what we eat.

Some of Dr. Bates' favorite "bang for you buck" foods included beans and rice, cabbage, daikon, beets, squash, rutabaga, apples, and even dandelion leaves which are available for free this time of the year!

Seminar attendees also left with a handout on the most healthy foods based on availability and affordability compiled in "The World's Healthiest Foods" by George Mateljan, 2001 - 2011.

As promised here is the recipe for the "Chocolate Beet Cake".

2 cup sugar, 2 cup flour, 1/2 tsp salt, 2 tsp baking powder, 1 tsp baking soda, 1/4 cup oil, 3-4 oz unsweetened chocolate, 4 eggs, 3 cups shredded beets

Combine dry ingredients. Sift and mix well together. Melt chocolate very slowly over heat or in a double broiler. Allow chocolate to cool and then blend with eggs and oil. Combine flour mixture with chocolate mixture, alternating with the beets. Poor into 2 greased 9" cake pans. Bake at 325 C for 40-50 min.
